Step-by-Step Guide to Building a Clay Pizza Oven Outdoors

By Tom Nonmacher

Have you ever dreamed of making authentic, wood-fired pizza in your own backyard? If so, building your own outdoor clay pizza oven may be the project for you. Not only can these ovens deliver a delicious, smoky pizza, but they can also become a beautiful focal point of your garden. If you're handy with DIY projects and have a bit of time on your hands, this can be a very rewarding project.

The first step is to choose a suitable location for your oven. It needs to be a flat area that's away from any flammable materials. Keep in mind that you will need a space to store wood and tools, and room to maneuver when cooking. Once you've chosen the perfect location, mark out the area with spray paint or stakes.

Next, you'll need to prepare the foundation. This usually involves digging a hole about 10 inches deep and filling it with a layer of gravel for drainage. On top of this, you'll pour a concrete slab, which will provide a solid, heat-resistant base for your oven. The slab should be at least 5 inches thick and extend a few inches beyond the size of the oven.

While the concrete is curing, you can begin to gather your materials for the oven itself. This will include clay, sand, straw, and water. The exact quantities will depend on the size of your oven, but a rough guideline is to use five parts clay to one part sand, with enough water to make a workable mixture. The straw is used as a binder, and you should add just enough to give the mixture a "spaghetti-like" consistency.

Now comes the fun part - building the oven dome. Start by creating a sand form in the shape of the oven interior. This should be roughly dome-shaped, with a flat floor and a height of about 16 inches. Once you're happy with your sand form, cover it in wet newspaper to prevent the clay from sticking.

Then, apply your clay mixture. The first layer should be about 3 inches thick and cover the entire sand form. This will be the oven's interior, so take your time to ensure it's smooth and even. Let this layer dry for a few days until it's firm but not completely hard.

Once the first layer is dry, you can add the insulating layer. This will be a thicker layer of the same clay mixture, but with more straw added for insulation. This layer should be about 5 inches thick. After this layer is dry, you can cut out the oven door and remove the sand form. Be sure to make the door large enough to fit your largest pizza peel.

Finally, you need to cure your oven. This involves building a small fire inside and gradually increasing the heat over a period of several days. This will help to remove any remaining moisture and harden the clay. Once the oven is fully cured, it's ready to use. Just add wood, wait for it to heat up, and start cooking delicious homemade pizza.

Building a clay pizza oven is a rewarding project that can provide years of delicious meals. It's a great way to add value to your home and garden, and it's also a fun project to tackle if you enjoy DIY. Just remember to take your time, follow the steps carefully, and most of all, have fun. Happy cooking!
